Ever since the past few updates, I am unable to set Music Bee as the the default music player. It doesn't show up under settings.

Ever since the past few updates
The last few -windows- updates, or the last few MB updates?

Either case, try white-listing MusicBee.exe in your AV/Security software and (if it works) report the issue to your AV developer.
Download the latest MusicBee v3.5 or 3.6 patch from here.
Unzip into your MusicBee directory and overwrite existing files.
