Skins - only color / no change to views

First off hi : )

Whenever I try a skin it only changes the colors and some textures.

Is there a way to also get the custom views / a complete overhaul from the skins?

No, skins only change colors and image elements.  For layout, you'll just have to play around with the settings.  This page might interest you:
