Questions / Classical Music: Composer as Last Name first for ripping to file?

I want to rip my classical music CDs to folders by composer with last name first. How do I do that? And in the tags and in MB I want the composer to show regularly as first name and last name. So, I don't want to alter the tags, just the rip to folder name.
Also, how do I save profiles for different ripping setups, or can I? I want a profile called "classical" as above for classical, and another setup filed by album artist for all other music genres, like pop, jazz, etc. Maybe called "Other Music"
Or ideally, would be one ripping script/setup that would save to a folder "composer" with last name first, but only if the genre is classical, and everything else ripped with any other tag genre would save to a folder by "album artist"
Also, for compilations I would like classical music saved to a folder under my music called "Classical Compilations" with the composer (last-first) under that and then the "Album" under that with track, title, etc. while anything non classical would save to a main folder under my music as "Various Artists" with "Album Artist" under that, the "Album" under that and then the track, title, etc.
