1.  Can someone explain the effect and use of "reset artwork cache"?  I mean, I basically get the idea, I just want to be clear on what it would be used for.

It clears artwork cache stored in AppData folder. Useful when artworks don't display properly especially when you're updating lots of files.

Would that be updating them outside of MusicBee?

Then artwork cache will be regenerated when any artwork is displayed since then. That clears any possibilities of non-existing, mismatched artwork images showing up.

What is the Category (not Genre Category) field for?  It's not a tag and it doesn't have anything in it when I add it to the main panel.

iTunes shows "Podcasts" for podcast subscription sites on the "Category" column, but it doesn't work with MB. So I too have no idea what that is for.
