In the music tab you can filter the library by genre. I want to list all music except 1 or 2 genres. Is there a way to do that? Like creating a tab or a custom filter I don't know.

Edit > Find > where Genre is not xxx
If you want to eliminate more than one genre, click the + sign to the right of the first set of criteria and repeat.
Make sure that you set 'match' to any.
Download the latest MusicBee v3.5 or 3.6 patch from here.
Unzip into your MusicBee directory and overwrite existing files.

Created a new tab with a search result with my condition and all is OK until I remove some albums from the library. In the Music tab the albums are removed but in my new tabs the old "phantom" albums are still shown even after a restart... Is it normal behaviour?

You will need to refresh the search to see updated results.

I think a filter with the same criteria would be best for what you're trying to do here.

Other possibility: create a new tab whose content is an auto-playlist.

Steps:
* In the Playlist Explorer, create a new Auto-Playlist with your criteria.
* Make sure that option "automatically refresh the matching tracks" is ticked in the dialog box
* Open a new tab and, in the popup navigator panel, select your newly created playlist
