I have looked at the previous threads regarding FiiO/Android Devices/MicroSD cards and getting them to sync with Musicbee.

I have tried the following

but ofcourse I cannot find any "Root Storage Path" in the appdata folder.

I am starting to think this is a waste of time and will probably just return the device. The lack of documentation from FiiO is frustrating.

Any help on what I am doing wrong would be great.

Download the latest MusicBee v3.5 or 3.6 patch from here.
Unzip into your MusicBee directory and overwrite existing files.

What I've always done is just avoid the hassle and sync use a card reader. My old Fiio X3 was pretty slow for transfers so that was a no brainer, but the process works jus as well with my Shanling and Sony players too.
Just plug the card into the reader (external works fine), sync your music/playlists, then move the card back into the device.
Regardless, I find syncing directly to the device is pretty much the same, just slower (IIRC Musicbee just treats the device like it would a SD card)
Also, you want to make sure the M7 is set to storage and not DAC in it's USB settings
