I am ripping an LP where the entire side is one single unbroken track, but the label shows there are 7 different movements in that track (with no timing information to identify where they start or end).  When the album is shown in MB, I would like it to show both the track name and all the movements, just like the label does.

This is very similar to an album with a Medley that lists all the pieces of music that are included in the medley.

Is there a way to do this without having to break up that one big track into multiple files?

You could take a look at the Chapter List plugin:

https://getmusicbee.com/forum/index.php?topic=22089.0

It is capable to do what you are asking for.
The only drawback is that it's interface panel will be floating and not nicely integrated into MusicBee's interface.

edit:
Maybe you could also achieve something like this by creating a cue file.
I am not using those a lot myself, so maybe another forum member can chip in and say if and how that can be done?
