I just updated to 3.3.7115 from an older 2.something version.

MusicBee no longer sees my Samsung Galaxy S8+ when it's plugged in via USB.

After searching the forums, I tried to find the MTP flag under Edit Preferences --> Devices but there doesn't seem to be any kind of checkbox for MTP there.

Has something moved?  Is there something easy I've missed?

Thanks for helping me over the hump here.

MTP is now always enabled.
However strangely in the last few days a couple of people have reported the same issue. Try using the patch version:

https://getmusicbee.com/patches/MusicBee33_Patched.zip
unzip and replace the existing musicbee application files

Thanks for the response!  Added the patched files, but phone still doesn't appear.

I opened the error log and see this line, apparently happening every time I run the program with my android phone connected.

8/11/2019 5:50:34 PM - WPD:The library, drive, or media pool is empty. (Exception from HRESULT: 0x800710D2)

When the phone isn't connected via USB and I run the program, nothing new appears in the error log.

in that case i cant help further. You could try v3.2 for which you can find a link from the first forum topic - you would need to reenable MTP mode in that version
