Would it be possible to add the tags "Display Artist" and "Display Composer" to the drop down menu in:

Depending on exactly what you're trying to accomplish with 'search & replace' you might find the Advanced Tagging & Reporting Tools plugin a big help. There's an Advanced Search & Replace module within the plugin and its tag dropdown includes "Artist (displayed)" and "Composer (displayed)".

It's probably the most downloaded, used, and useful plugin available for MB. Check out its thread here https://getmusicbee.com/forum/index.php?topic=3833.0

I suggest reading the first couple of pages and then the last few. Unless you want to go through all 130+ pages.

It's mostly simple character replacement, semicolon with ampersands for example. I've used that plugin a couple of times but it's so versatile and I feel that I don't understand it fully yet, so I'm a bit hesitant to use it out of fear for screwing something up.

But I do agree with you that it's very useful so my plan B is to actually learn how to use it properly.

It should be able to handle the replacement you want. And yes, there's a little bit of a learning curve to using it. The best suggestion I can offer is to only change one or two tracks at a time until you confirm it's making the changes as you expect. Then do an entire album or two. Then let it fly.
