How do change the name of the tags, especially the new ones I've added?

Hi, welcome to the forum!

You can change custom tag names in Tags (1) preferences.  You can relabel tags without changing the internal tag names by going to the top right of the main panel, choosing "Customize Panel" from the menu there, and clicking "Configure Fields" in the bottom right of the pop up.  Just don't relabel anything to an existing tag name, especially a permanent tag name like Year.
