What do I need to do when burning CDs so that it files tracks under Artist Name & Title, instead of as "track01.cda", "track02.cda" & etc?

You need to set the disc format as a "data DC/DVD/BD" in the Disc Burner settings, and -not- as an audio CD.  You will probably need to adjust the file naming template to suit your needs.
Download the latest MusicBee v3.5 or 3.6 patch from here.
Unzip into your MusicBee directory and overwrite existing files.

Will I need to convert the files to a specific format to get them to play in a standard (factory) vehicle cd player?  ???

That depends on how new/old the CD player is.  Most newer CD players can play MP3 files.  If that's the format you want to use, then check (tick) the "MP3 CD" option in Disc Burner preferences.  If your player currently plays MP3 CDs, then this should work.  If it doesn't play MP3s, then you're going to have to stick to the "Audio CD" format.  Which won't give you the Artist Name & Title that you're looking for.
