In the main "Tracks" area when I just want to play a single song I would, to me logically expect that a double click would do that. Sure it starts to play the selected song, BUT it also adds ALL the music files in the folder to the "Playing Tracks" / playlist!?!
How do I turn off so MusicBee does NOT add anything but the selected song(s) by normal left clicking?
Yes I am aware of the right-click options, however to me it's more logical just to normal left-click.

Your left navigation panel is in auto-hide mode. You can change that by clicking the Pin icon at the corner. Although you might be interested in the standalone folder panel.

With that option unchecked, mine doesn't show any popups when I play a file from Windows Explorer.
If yours does (and you're running the latest version) you might have post a bug report.
If you mean the little window that shows you each track that starts playing, Edit > Edit Preferences > Now Playing and uncheck Show Popup in the Playback options.
