You sure can, check out the Skinning Guides (http://getmusicbee.com/forum/index.php?topic=2392.0) to help get you started.
Visit the Bitmap Skinning topic (http://getmusicbee.com/forum/index.php?topic=3834.0) for some info on how to add bitmaps to your skins.
