Basically, I want to replicate this from iTunes:

Where do you want this? The library view already does that.

Album and Tracks view only allows two headings above the list of album tracks.
Closest equivalent would be to have album title above the cover, and artist and other details to the right:

If you set 'track layout' to 'detailed list' you can have no less then 7 fields.

True, but tracks would be shown to the right of those fields, which is probably getting a bit far away from OP's request:

I really like the "Album Covers" layout...
I'm not definitely going to switch with Album and Tracks view for just a third header :-[
I thought this would be easy to add... if it's not then it's fine the way it is now, not a big issue :D

So you are referring to the extended panel in Album view.
Check the settings of that, you can accomplish the same as in my previous screenshot.

I already use the sub-grouping header for albums with multiple cd names (Disc 1, Disc 2, Bonus Tracks etc.)

That's up to Steven - the sole developer - to decide. We're just trying to find workarounds based on the settings that are available now.

Are we talking about the expanded view? If so, click on Artwork which is near the top left of the main panel. Select Customize (or perhaps customize panel) and then towards the middle on the right click on more settings (or show settings) which is specifically for the expanded view. I'm pretty sure that's where you can add a third (and perhaps fourth) line. Note that my instructions are coming from my memory as I don't have MB in front of me at this point.

Nup. Those are the settings OP posted in their black and pink screenshot. The fields/tags shown above the tracks are under the Header section, which only allows two.

Ahhh - okay. As I said, it was going from memory and if I had my machine in front of me, I would've noticed that. Thanks for the correction.

For the next v3.5 update I have added support for 3 fields to be displayed on a third line, so its the same as the Album and Tracks view using Compact Grid layout
